Zipping directory while files are add

Sorry for the silly question but I cant find anything online about this.
Lets say I have a directory ~100GB and I execute
tar -cvf mydirectory.tar /mydirectory
Zipping the directory might take ~15 minutes.
What happens if in those 15 minutes new files are added to the directory or some files are deleted from the directory?
Will tar pickup these files and add them to the zip?
What will happen if new files are added all the time? Tar will run indefinitely?
